The Continental Cuisine course explores some of the world’s major cuisines. Topics include various geographic regions, historic and cultural influences, indigenous ingredients, recipes, cooking methods and techniques. Production will include French, Italian, and other selected ethnic and regional cuisines. Culinary Arts Principles and Applications Introduction is a suggested prerequisite.
